At Northwell Health, the largest healthcare provider in New York, SVP and Chief Experience Officer Sven Gierlinger saw firsthand how bad food was affecting patient satisfaction. With a background in fine dining and hospitality, he knew there was a better way.

 

“We were serving fried, frozen, and processed foods—not really good choices,” said Gierlinger. “There was very little fresh, healthy cooking happening in the kitchens.”

Building a Better Food Model

Northwell serves over 10 million meals annually across 21 hospitals. Turning that system around was no small task. A cross-functional team—spanning procurement, marketing, nutrition, and HR—was formed to rethink everything from sourcing to preparation.

 

The result? The Northwell Health Food and Nutrition Commitment, which declares food as a form of medicine and healing. The system eliminated processed foods, introduced fresh ingredients, reduced saturated fats and sugar, and implemented a “Northwell Healthy Choice” label for smarter eating.

 

A Michelin-starred chef, Bruno Tison, was brought in to lead this transformation. Tison, once a top talent at New York’s Plaza Hotel, trained hospital food service staff in fresh, flavorful cooking techniques. His impact was immediate—bringing a fine-dining approach to patient trays and cafeteria lines alike.

Locally Sourced, Freshly Cooked

Northwell’s new menus focus on whole, plant-forward foods, often sourced from local farms. They even launched a rooftop garden on one of their hospital buildings to grow produce on-site.

 

Vacant chef positions were filled with professionals from the hospitality industry. Working alongside dietitians, they crafted menus that meet strict dietary needs—without sacrificing taste.

 

And the result? Patients started praising the food. Comments included sentiments like, “I forgot I was sick,” and “Your caring meal preparation was the highlight of my stay.”

Emory Healthcare’s Southern Twist on Healthy Eating

Georgia-based Emory Healthcare is taking a similar path—with a Southern spin. With 11 hospitals and more than 250 provider locations, Emory serves thousands of meals daily. Assistant Culinary Director Mike Bacha and Food Services Project Manager Kip Hardy have led a slow but steady shift to plant-based, locally sourced menus.

 

From working with The Common Market to connect with small farms, to reimagining comfort food classics with healthier twists—like fried tofu or lentil walnut tacos—Emory is proving that nutritious hospital food can still be delicious.

 

“Vegetables used to arrive frozen and turn mushy,” said Hardy. “Now we showcase fresh produce, whole grains, and globally inspired dishes that appeal to both patients and staff.”

Bringing Chefs to the Front Lines

One of Emory’s most effective changes was moving chefs out of back kitchens and onto the service lines. Cooking in front of guests and gathering real-time feedback empowered chefs and made hospital food feel more personal and intentional.

 

It also encouraged dialogue between culinary staff and the patients and visitors they serve—boosting morale on both sides of the counter.

Balancing Diets and Demands

Hospital food service isn’t one-size-fits-all. Emory sees some of the sickest patients in the country, many with strict dietary limitations. Crafting meals that are low in sodium, heart-healthy, and appealing to diverse cultural tastes is a daily challenge.

 

Yet Emory’s team sees food as a critical part of recovery and dignity. Their chefs continue experimenting with global cuisines, plant-based proteins, and seasonal menus to meet clinical and emotional needs.

Community Engagement and Education

Both Northwell and Emory are extending their food innovations into the community. They host cooking demonstrations, participate in wellness fairs, and share recipes that promote sustainable, plant-forward eating at home. At Emory, Valentine’s Day featured a community-wide, four-course, heart-healthy dinner—plant-based and prepared with love.
